Today, we're preparing a plant-based peanut dragon bowl. This a way to get a beautiful variety of colors and textures in a nourishing and flavorful dish. Plus, you can easily adjust it for your family's needs! Spicy Peanut Sauce 1 cup natural crunchy peanut butter 1 cup water 3 Tbsp tamari, soy sauce, or coconut aminos 3 cloves garlic, minced 1 Tbsp fresh grated ginger 1 Tbsp hot chili sauce (adjust to your taste) 1/2 can (200ml) coconut milk (or other unsweetened, non-dairy milk) 2 tsp sesame oil 2 Tbsp lemon juice Prepare Sauce: Put peanut butter and water in a medium saucepan. Heat on a low temperature stirring until smooth and creamy. Add tamari, garlic, ginger, hot sauce, coconut milk, and sesame oil. Cook on low heat for 15 to 20 minutes, stirring occasionally. Remove from heat. Stir in lemon juice. Building the Bowl: Prepare optional toppings, steam vegetables, and assemble bowls.
