Passion fruit syrup

In a medium saucepan, combine 1 cup of sugar with between 3/4 cup - 1 cup of cold water. Stir over very low heat until sugar is dissolved and begins to simmer. Split 3-5 passion fruits in half, remove the fruit and seeds inside, and add to the simmering sugar mixture. Stir and keep simmering over low heat for 2-5 minutes. Remove from heat, and leave standing for 1.5-2 hours. Transfer to a syrup bottle and add 1/2 ounce silver Puerto Rican rum as a stabilizer.

Trader Vic Grog

1 oz fresh lemon juice

1 oz pineapple juice

1 oz passion fruit syrup

2 oz Dark Jamaican rum

1 dash Angostura bitters

Combine the ingredients in a cocktail shaker with 1 cup crushed or cubed ice. Shake and pour unstrained into a double old-fashioned glass. Add more ice to fill. Garnish with mint.
