Former banker LG Han is the Chef and owner of Labyrinth, a new expression of Singapore cuisine.

The award-winning, three-time Michelin-star restaurant is lauded as one of the top restaurants in Singapore and 70 to 80 per cent of the menu at Labyrinth relies on produce sourced from local farms

LG Han graduated from the London School of Economics (LSE) with an Honours in Finance and Accounting in 2009, and pursued a lucrative career in Goldman Sachs and Citibank simply to fulfil “family expectations”.

By 2012, he quit his full-time job to pursue becoming a professional chef and later opened Labyrinth in 2014.

Adrian Abraham speaks to LG Han about his career in banking, his grandmother's influence on his cooking and what it means to be in Asia's top 50 restaurants, particularly given the new normal and everything he had to endure during the initial phases of the pandemic.
